INGREDIENTS
- PAD THAI
- Rice Noodles, 1 packet
- Firm Tofu, 1 block
- Garlic, 2 cloves (minced)
- Green Onions, half a bunch (diced)
- Olive Oil, 2 tbsp
- SAUCE
- Tamarind Paste, 1 1/2 tsp
- Soy Sauce, 1/2 cup
- Garlic, 4 cloves (minced)
- Chili Sauce, 1 tsp
- Coconut Sugar, 1 tbsp
- Garlic, 2 cloves (minced)
- Juice of 1 Lime
- Water, as needed
METHOD
- In a small saucepan combine the ingredients for the sauce. Stir as it cooks. Add more or less water until desired consistency is achieved.
- In a large pan over medium-low heat, add the olive oil and the tofu, cooking on all sides for about 10 mins.
- Add the garlic and green onion and stir through. Next, add the noodles (pre-soaked in hot water if needed). Stir until cooked through.
- Add the sauce to the pan and stir through until nicely coated. Serve warm in your favorite coconut bowls with extra green onion and lime. Enjoy!
