[Vegan food] – EASY VEGAN PAD THAI

 

Enjoy the beautiful savoury flavours of Vegan Pad Thai right at your home. This is so easy to make and tastes way better than takeout.

INGREDIENTS
  • PAD THAI
    • Rice Noodles, 1 packet
    • Firm Tofu, 1 block
    • Garlic, 2 cloves (minced)
    • Green Onions, half a bunch (diced)
    • Olive Oil, 2 tbsp
  • SAUCE
    • Tamarind Paste, 1 1/2 tsp
    • Soy Sauce, 1/2 cup
    • Garlic, 4 cloves (minced)
    • Chili Sauce, 1 tsp
    • Coconut Sugar, 1 tbsp
    • Garlic, 2 cloves (minced)
    • Juice of 1 Lime
    • Water, as needed
METHOD
  1. In a small saucepan combine the ingredients for the sauce. Stir as it cooks. Add more or less water until desired consistency is achieved.
  2. In a large pan over medium-low heat, add the olive oil and the tofu, cooking on all sides for about 10 mins.
  3. Add the garlic and green onion and stir through. Next, add the noodles (pre-soaked in hot water if needed). Stir until cooked through.
  4. Add the sauce to the pan and stir through until nicely coated. Serve warm in your favorite coconut bowls with extra green onion and lime. Enjoy!
